No surprise here, we are huge fans in this house of fish. Not only is it good for you, but we think it is delicious. Salmon is a favorite choice when it comes to choosing to eat healthy, because it contains significant amounts of essential omega-3 fatty acids , which support heart and eye health . This heart-healthy fish boasts a boatload of other nutrients, as well. When I saw the contents of the February Degustabox I knew the product I wanted to highlight with a special recipe and that it would work perfectly in this delicious Honey Mustard Salmon bake that we love.
Being an oily fish with a stronger flavour, I knew the salmon would hold up well with the strongish flavour of Dijon Mustard, especially Grey Poupon, which is a favourite of ours.
But before I give you the recipe, here is some more about the box.

No surprise this is the product I chose to highlight with a recipe this month. We always have a jar of it in the house. It is a store cupboard ingredient I would not be without!
We enjoy it with cold meats and cheeses and in recipes such as this delicious one I am sharing today. You are going to love this.
Salmon is just about the oiliest I will go with fish. I am not fond of mackeral or sardines I have to say. I do like tuna as well, but that's about it when it comes to oily fish. Todd is fond of the stronger flavoured ones. I am a bit of a wuss.
This recipe involves brushing fillets of salmon with a lush Honey & Dijon mustard sauce, and then pressing on a buttered crumb topping prior to baking.
I love fish as a supper option as it is quick and easy to cook. The rich flavour of salmon lends itself perfectly to join in a perfect marriage of stronger flavours.
This cooks very quickly in the oven to perfection . . . you will know its done when the fish flakes easily with the tines of a fork.
The mustard is mixed with some honey, mayonnaise and vinegar to create a beautiful sauce, which you just brush over the salmon fillets. I often double the sauce recipe to use as a dipping sauce for when I go to serve it.
Can you ever have too much honey mustard sauce??? I don't think so!!
Panko bread crumbs make for a nice crisp finish in the crumb topping. You can of course use whole wheat Panko if you want to be a bit healthier and if you can find it!
Altogether this is really delicious!
I didn't get a photo of it plated up, but we enjoyed it with some lovely buttery mashed potatoes and some steamed broccoli spears. It was a really nice supper and quite healthy as well. The quantities given in the recipe are for two portions but can very easily be doubled to feed more. This would also make a fabulous dinner party entree!
Honey Mustard Salmon
Yield: 2 (but can easily be doubled)
Moist and juicy salmon with a tasty honey mustard sauce and panko crumb coating.
ingredients:
- 2 fresh salmon fillets, rinsed and patted dry with paper towells
- 1 TBS mayonnaise
- 1 TBS Dijon mustard
- 1/2 tsp yellow mustard
- 1 TBS liquid honey
- 1 tsp white vinegar
- pinch each paprika, salt and black pepper
- 1 TBS butter, melted
- 3 TBS panko bread crumbs
- 1 tsp parsley flakes
instructions:
How to cook Honey Mustard Salmon
- Preheat the oven to 200*C/400*F/ gas mark 6. Line a baking sheet with aluminium foil and spray with nonstick cooking spray.
- Whisk together the mayonnaise, Dijon mustard, yellow mustard, honey, vinegar, paprika, salt and pepper, combining well.
- Pat the salmon dry and place onto the baking sheet. Divide the mustard sauce between each salmon fillet, brushing it all over to coat.
- Mix together the butter, panki and parsley flakes. Pat half of this mixture onto each salmon fillet.
- Bake in the preheated oven for 12 to 15 minutes, or until the fish flakes easily with a fork. Serve immediately.
I really DO make great use of and enjoy many of these fabulous products I am sent each month to try out.
